Ingredients
For the Filling
1 lb ground beef
2 medium potatoes, peeled and cut into small squares
1 small onion, diced
2 garlic cloves, minced
1 tsp paprika
Salt & black pepper to taste
1 tbsp olive oil
For the Tacos
10 corn tortillas
1½ cups shredded mozzarella or Mexican cheese blend
Oil for frying or crisping
Optional Toppings
Shredded lettuce
Sour cream
Jalapeños
Salsa
Fresh cilantro
Avocado slices
Instructions
1. Brown the Ground Beef
Heat a large skillet over medium heat. Add the ground beef and cook until nicely browned, breaking it apart as it cooks.
Add onion and garlic, then cook for 2 more minutes until fragrant.
Season with paprika, salt, and black pepper.
2. Add the Potatoes
Add the potatoes cut into small squares directly into the skillet with the beef. Stir well and cook for about 10–12 minutes, stirring occasionally, until the potatoes become tender.
3. Build the Tacos
Warm the corn tortillas slightly so they don’t crack. Add cheese to one side, spoon in the beef and potato mixture, then fold the tortilla over.
4. Crisp Them Up
Add a thin layer of oil to a skillet over medium heat. Cook tacos 2–3 minutes per side until crispy, golden, and melty inside.
Place on paper towels for a minute before serving.
Serve warm with your favorite salsa and toppings.
