Grandma-Style Chicken Vegetable Soup

Ingredients

  • 1 whole chicken or chicken pieces

  • 1 onion, diced

  • 3–4 garlic cloves, minced

  • 2 tomatoes, diced

  • 2 tablespoons olive oil

  • 2 potatoes, cubed

  • 2 carrots, cubed

  • 2 celery stalks, chopped

  • Salt, to taste

  • Black pepper, to taste

  • 2 fresh bay leaves

  • Fresh cilantro, chopped

  • Water

Instructions

Step 1: Start the Soup

Fill a large pot with water and bring it to a boil. Add the chicken, salt, and black pepper. Let it cook while you prepare the vegetables.

Step 2: Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, and tomatoes. Cook for about 5 minutes until softened and fragrant.

Add the potatoes, carrots, and celery. Continue cooking for about 8 minutes, stirring occasionally.

Step 3: Combine and Simmer

Transfer the sautéed vegetables to the pot with the chicken. Stir everything together and reduce the heat to a gentle simmer.

Cook for approximately 45 minutes, allowing the flavors to develop and the chicken to become tender.

Step 4: Finish with Fresh Herbs

A few minutes before serving, add the fresh bay leaves and chopped cilantro. Taste and adjust the seasoning if needed.
