Grandma-Style Chicken Vegetable Soup

Ingredients
1 whole chicken or chicken pieces
1 onion, diced
3–4 garlic cloves, minced
2 tomatoes, diced
2 tablespoons olive oil
2 potatoes, cubed
2 carrots, cubed
2 celery stalks, chopped
Salt, to taste
Black pepper, to taste
2 fresh bay leaves
Fresh cilantro, chopped

Instructions
Step 1: Start the Soup
Fill a large pot with water and bring it to a boil. Add the chicken, salt, and black pepper. Let it cook while you prepare the vegetables.
Step 2: Sauté the Vegetables
In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, and tomatoes. Cook for about 5 minutes until softened and fragrant.
Add the potatoes, carrots, and celery. Continue cooking for about 8 minutes, stirring occasionally.
Step 3: Combine and Simmer
