Ingredients
1 cup harvest blend couscous
4 oz prosciutto, chopped
1 shallot, finely diced
3 garlic cloves, minced
2 tbsp butter
2 ½ cups no-salt chicken stock
½ cup grated Pecorino Romano
Salt, to taste
Black pepper, to taste
Instructions
In a large skillet over medium heat, add the chopped prosciutto and cook until lightly crispy, about 3–4 minutes.
Add the butter, diced shallot, and garlic. Cook for another 2–3 minutes until soft and fragrant.
Stir in the harvest blend couscous and toast it lightly for 1 minute to bring out the flavor.
Pour in the no-salt chicken stock and bring everything to a gentle boil.
Lower the heat, cover, and let simmer for about 12–15 minutes, stirring occasionally, until the couscous is tender and the liquid is mostly absorbed.
Turn off the heat and stir in the Pecorino Romano until creamy and combined.
Finish with black pepper and taste before adding salt since the prosciutto and cheese already bring saltiness.
