Orecchiette with Sausage & Spinach 🤍

A warm, simple pasta that feels like home. This is one of those dishes you make when you want something comforting, full of flavor, and easy to share with the people you love.

🍽️ Serves 4 People

Ingredients :

  • 12 oz orecchiette pasta

  • 1 lb Italian sausage (mild or spicy)

  • 4–5 cups fresh spinach

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped (optional)

  • 1/2 cup grated Parmesan cheese

  • 2 tbsp olive oil

  • 1/3 cup pasta water (reserved)

  • Salt & pepper to taste

  • Optional: red pepper flakes, squeeze of lemon

Instructions:

  1. Cook the pasta
    Bring a large pot of salted water to a boil and cook the orecchiette until al dente. Reserve some pasta water, then drain.

  2. Build the base
    In a large pan, heat olive oil over medium heat. Add onion and cook until soft, then stir in garlic and cook for about a minute.

  3. Cook the sausage
    Add the sausage, breaking it into small pieces. Cook until browned and fully cooked through.

  4. Add the spinach
    Toss in the spinach and let it wilt into the mixture.

  5. Bring it together
    Add the cooked pasta to the pan. Pour in a bit of reserved pasta water and sprinkle in the Parmesan. Toss until everything is well combined and lightly coated in a silky sauce.

  6. Finish & serve
    Season with salt and pepper, and add a squeeze of lemon if you like a fresh touch. Serve warm with extra Parmesan on top.
